Since Paul has been gone, our dinners have been simplified.
One day, a friend cooked for us (thanks, Mandy!), then we had that for leftovers a couple of times. Other than that, it's pretty much been some kind of vegetable, some kind of fruit and then a wild card, like cheese sticks or almond butter. Truly, we live on the wild side around here. As for me, I usually have a little of whatever they're having plus a handful of salad mix with lemon juice and a very large glass of wine. =)
Then I realized that, with the exception of the eggs we had for breakfast maybe twice (cereal is SO much easier, y'all) and the yogurt they get as soon as I stumble out of my room, we've been a tiny bit short in the protein department.
Enter: Mommy's Tuna Dip!
It's so good! We none of us love the gloppy gray stuff (well that certainly sounds appetizing, doesn't it! Haha, sorry, traditionalists!), so I buy the other kind of tuna. I never can remember if it's the albocore or white that I like - I just know what the can looks like. One of the two is more expensive...but I don't know which. I know my detail-loving friends would be cringing right now. =)
Anyway, start with a large can of the pink tuna. Add about a quarter cup of whatever mayo - I make my own because I haven't found any without modified food starch or some other kind of stabilizer - it's a giant pain the rear but it probably tastes better. Anyway, after that add the tiniest little bit of salt, a half teaspoon each of dill and parsley and maybe a quarter teaspoon of pepper. I'm sure fresh ground would be better but we don't have a mill so I can't say for sure. =) Then the juice from half a lemon. Stir it all up and then stir in half a small can of chickpeas that have been drained and rinsed. YUMMY!
I served it with celery and carrots sticking out like a porcupine, which the girls thought was cute but didn't actually result in them eating the crudites. They did kill the mandarin oranges and jelly oh-oh-oh that went alongside, though. And I am very much enjoying my glass of Malbec. =)
