Mmmm...lettuce wraps

This is what we had for dinner tonight. I highly recommend you try it sometime...it's totally worth all the chopping =)

1/2 bag chicken tenderloins (10-12) cooked from frozen at 375 for 1/2 hour and cooled, then chopped into itty-bitty pieces, think 1/4 inch cubes. =)

1 cup each of very finely chopped green onions, mushrooms, green bell peppers, shredded carrots
1 tbsp dried ginger
1 tsp dried garlic
1/4 tsp or more to taste cayenne
2 tbsp sesame oil
1 tbsp hoisin sauce
*Non-cavemen add a couple tbsp of soy sauce - it will be super!*
1 tbsp or more veg oil or until mixture reaches desired consistency
1 tbsp veg oil for the pan
1 head butter lettuce

1) Chop up all the stuff.
2) Mix it together with ginger, garlic and oils.
3) Heat the remaining tbsp veg oil over med-high heat. Sautee chicken mixture until hot, adjusting seasonings as needed.
4) Wrap it up!

It was so good. SO GOOD! Honestly you don't even need the soy sauce - these tasted great - but I think it would be really good that way, too. =)
